Coolant light on a 2004 VW Jetta 1.8L turbo (gas)?

The manufacture recomends not to touch the coolant for 100k miles. The coolant level is fine. The coolant tests fine. When the car is cold it beebs and the coolant light comes on. Once it has warmed up upon restart the light does not come on. Sometimes the temperature gauge works other times it dosen't. The car has 50k miles on it. Never runs hot. PLease help..

it may sound weird but it almost sounds like the thermostate has gone bad... yeah its a newer car but u never know. If u know how to take the thermostate housing apart then do so and take the thermostate inside the house and put it in a small pot with water and heat it to a boil and watch it and see it the thermostate compresses if it doesnt then it is bad and it should be a cheap fix but if it does compress then thats not the problem.
